I love this take on the traditional Vietnamese sandwich. it makes for the most delicious lunch or dinner; it’s spicy, sweet and savory. everything can be made ahead easily and tossed together right before serving.

Find the original recipe here. From the cookbook healthyish by Lindsay Maitland Hunt. I can not recommend this cookbook enough! I made a few small changes: white rice (because arsenic), I added some sour cream to the sriracha mayo (sofa king good), and I included the remaining 1 tablespoon of rice vinegar to the pork mixture- at the end when you stir in the fish sauce and sugar.
