mm’s cake

it was our friends birthday back in january and we decided to make her a cake totally on time: in march. she was completely surprised. we made tee's to declare our love for MM, drank margaritas and had a quick twerking sesh under a nearly full moon. it was a great fucking party. 

it was kat's idea to fill this incredibly MOIST (yep i said it) cake with mini m&m's. really good idea kat! i then made a vanilla version of my intuitive butter cream and done!

i have made countless versions of this perfect, one bowl yellow cake: chocolate buttercream, raspberry with chocolate ganache, lemon buttercream and vanilla buttercream. it's just so delicious and versatile. 

find the recipe for the yellow cake here. print it, study and memorize it, because i promise you'll make it on repeat. we used the tops of champagne glasses to make the cake holes. this is a great basic buttercream recipe. i didn't use a recipe for mm's buttercream, as i created an intuitive buttercream by softening about a cup of butter and whisking it on low in my kitchen aid. i then added, 1/2 a cup at a time, sifted powdered sugar, about 1/2 teaspoon vanilla extract and 1/2 scrapped vanilla bean. I then keep adding sugar in 1/2 cup increments until the mixture has thickened and the sweetness is where i'd like it to be. this involves lots of tasting along the way, but i think it's the best way to do it. if your buttercream gets too thick just add a bit of milk or heavy cream. cake rules! xo
